Spaghetti Alla Puttanesca
This is such an amazing flavour combo and one of our all time favourites
2 tablespoons of non-pareil salted capers
Around 15 olives pitted
4 cloves of garlic
1 bunch of spring onions
1 can tomatoes
2 anchovies (optional)
1 red chilli or more if you like it hot
1/2 cup corriander
1/2 cup parsley
1 cup of baby kale or greens (optional)
Parmesan cheese
Spaghetti / fettucine of your choice
Heat 1 tablespoon of olive oil or coconut oil in a fry pan.
Saute capers, olives, garlic, spring onions, chilli for 2-3 mins. Add in tomatoes, anchovies and chopped shredded kale and cook for a further 5 mins or until kale has wilted. Stir in the corriander and parsley and simmer for another minute. Cook spaghetti to your liking.
This meal takes about 20 minutes. Such an easy delish comfort meal on a cold winters day hope you enjoy it as much as we did.
